York’s Best Western Monkbar Hotel has taken a giant step in its drive to boost its green credentials, by installing a revolutionary machine that literally eats waste food!

The hotel is the first in the Best Western group - and the first hotel in Yorkshire - to fit a Waste-2-Water digester which will significantly reduce the amount of waste it produces.

The machine uses a bio-enzymatic formula to break down waste food into water, which is then filtered and disposed of through the hotel’s drains. Another advantage of the system is that the enzymes continue to work in the sewerage system to disperse residual grease and dirt.

In addition to the hospitality industry, the Waste-2-Water technology is becoming increasingly popular within hospitals and catering organisations, as the system is not only a hugely improved alternative to landfill and compactors, but shows immediate cost savings and environmental benefits.

The Monkbar Hotel’s environmental initiatives have already been recognised by Green Tourism Business Scheme. Last year, it was the first city centre to win the organisation’s Silver Award.

Last May it was “highly commended” in the Considerate Hotelier Awards and was the only Yorkshire hotel to have been shortlisted in the environmental category.

Monkbar Hotel Director June Nelsey said: “As part of our green policy we have been looking at ways to reduce the volume of waste we send to landfill.

We already compact paper and cardboard and recycle glass. This machine is a massive step forward in the disposal of food waste.

We are very happy to be leading the excellent Best Western Green Hotel initiatives, and this will make a huge improvement to waste control.

It is hygienic, simple to use, god for the environment, and will also contribute to financial savings on waste disposal.

June added: “A year ago we were presented with our Green Tourism Business Scheme silver award. Our sights are now well and truly set on gold and, with this machine, we believe we are well on the way to achieving it.

Today we are turning waste to water - hopefully the next step will be turning water into wine!
